One of the best tricks I've ever seen to get out of mud - it would be difficult - but not impossible - to do with small diameter wheels. If your tires stick way out beyond the body, it just might work for an SUV: I don't need no stinkin' winchFrank

I was thinking about it. i wonder how well this idea would work in sand?

It should work just fine, but I wouldn't make the pole much longer than the OD of the tire, or the resulting off-camber will cause the pole to bang the body as you pole-vault and bounce.

We used to chain a 12" tree trunk to the back tires on a 4wd case rubber tire backhoe when we had to get a trench across a swamp. It acted like a paddle wheel in the muck. We cut them at wheel diameter length, but the pole vault idea would work nice for getting back up the bank.
