I just got a set of 32x11.50x15 Mud Kings and I think they are very narrow for the size and short also. They measure 31" tall on the wheel and 8.5" tread width. Is this normal?
I would like to compare your tires with my tires.

11.5 on 7" rim is gonna be narrow.Just form the way it looks, you might just have too much air in it. Too much air will have a cupping effect ....only the middle part of the tire touch ground.

Here's a picture of my 4Runner with Phantom AT 32x11.5x15 tires. These are the same tires as the Sport King AT I think. I don't get any rubbing at all with them and I think I measured them at just a hair over 31". They bulge a bit on the sidwalls. My last 4Runner I had BFG AT with 32's on stock wheels and they rubbed a little at full turn so I think the BFG is closer to a true 32" tall tire. I'm getting the same wear pattern on my tread as you. The outside edges cup in and don't make contact with the ground. An 8" rim would hold the tire better IMO. My treadwidth is measuring 9" and the section width looks like it's measuring around 11".

Yup that's normal I had a set of 32x11.50 mud king XTs on a 15x8 they measure out to about the same.
Also had a set of 33x12.50's on my 93 4runner they weren't that much bigger either.

man, those things look pretty meaty on the tread!

and actually, if you want to get technical, not enough air will cause cupping, too much will cause crowning where the tread only wears in the center...

I admit that does look pretty slick.
35x12.50 mud king XT's are about the same size as 35x12.50 BFG MT's I think they are both 34.5" tall and about 11" wide.

Is it possible to run 11.5" wide tyres on a 7" rim without any problems.

It should be fine. It's basically like running a 33x12.50 on a 15x8 rim. A 33x10.50 tyre would be better for you though.
