Peaches, Peach jam, Peach honey, black berry jam, watermelon jelly, Roma tomatoes, Roma Paste, ETC....going to get a pick up full of apples this weekend. <img src="/forums/images/graemlins/wink.gif" alt="" />
Canning is about survival.

I've been canning this week too. Got several of those gallon size cans of various foods (peaches, carrots, applesauce, baked beans, etc) and have no way of using anything that big without it going bad. Didn't want to take up a lot of freezer space either. So I've been canning them. Not as hard as I thought it was going to be either. Now I want to can everything. LOL ... Now where did the dog disappear to ... <img src="/forums/images/graemlins/zombie.gif" alt="" />

I used to can with my grandmother and great aunts. Here's a good one. Quince jam is so full of pectin that a biscuit with that stuff on board will bring a full case of blam butt to a halt. Crabapple is good, too. My all time fave is pear preserves.
Y'all be real careful with that stuff, temp wise. If you aren't, you can preserve the nasty bacteria along with the food stuff.

Don't know about anyone else, but I'm using a guide just for that reason and following all the directions to a T. I don't want any of that nasty stuff in there for sure. I feel pretty good about the fact that it was already canned commercially before hand, but I'm not skipping anything just because of that either.

A must is the book 'Putting Food By'. Also, contact your local Cooperative Extension Service to see if they offer canning classes. With all the meat and fish that gets canned up here, it's offered. Our CES also has a video library series for canning IN cans.
Canning isn't just about survival per se, but eating well, as well.
